Irresistible Red Velvet Cupcakes Recipe: Classic and Delicious

Ingredients:

For the Red Velvet Cupcakes:

  • 1 ½ cups (190g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • ½ cup (115g) unsalted butter, softened
  • 1 large egg
  • 1 cup (240ml) buttermilk
  • 2 tbsp (15g) unsweetened cocoa powder
  • 1 tbsp red gel food coloring
  • 1 tsp vanilla extract
  • 1 tsp white vinegar
  • 1 tsp baking soda
  • ½ tsp salt

For the Cream Cheese Frosting:

  • 1 cup (230g) unsalted butter, softened
  • 8 oz (225g) cream cheese, softened
  • 4 cups (500g) powdered sugar
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.

2. Prepare the Cupcake Batter:

  • In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
  • In a large bowl, using an electric mixer, cream the butter and sugar together until light and fluffy, about 3-4 minutes.
  • Add the egg and mix until fully incorporated. Mix in the vanilla extract and red gel food coloring.
  • Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix just until combined. Be careful not to overmix.
  • Stir in the vinegar.

3. Bake the Cupcakes:

  • Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
  • Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cupcakes cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely.

4. Prepare the Cream Cheese Frosting:

  • In a large bowl, beat the softened butter and cream cheese together until smooth and creamy.
  • Gradually add the powdered sugar, 1 cup at a time, beating on low speed until combined.
  • Mix in the vanilla extract and a pinch of salt. Beat on high speed until the frosting is light and fluffy.

5. Frost the Cupcakes:

  • Once the cupcakes are completely cool, frost them with the cream cheese frosting using a piping bag or a spatula.
  • Decorate as desired with sprinkles, edible glitter, or fresh fruit.
