Ingredients:

- 1 cup (200g) granulated sugar
- ½ cup (115g) unsalted butter, softened
- 1 large egg
- 1 cup (240ml) buttermilk
- 2 tbsp (15g) unsweetened cocoa powder
- 1 tbsp red gel food coloring
- 1 tsp vanilla extract
- 1 tsp white vinegar
- 1 tsp baking soda
- ½ tsp salt
For the Cream Cheese Frosting:
- 1 cup (230g) unsalted butter, softened
- 8 oz (225g) cream cheese, softened
- 4 cups (500g) powdered sugar
- 1 tsp vanilla extract
- Pinch of salt
Instructions:
1. Preheat the Oven:
- Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
2. Prepare the Cupcake Batter:
- In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
- In a large bowl, using an electric mixer, cream the butter and sugar together until light and fluffy, about 3-4 minutes.
- Add the egg and mix until fully incorporated. Mix in the vanilla extract and red gel food coloring.
- Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix just until combined. Be careful not to overmix.
- Stir in the vinegar.
3. Bake the Cupcakes:
- Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cupcakes cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely.
4. Prepare the Cream Cheese Frosting:
- In a large bowl, beat the softened butter and cream cheese together until smooth and creamy.
- Gradually add the powdered sugar, 1 cup at a time, beating on low speed until combined.
- Mix in the vanilla extract and a pinch of salt. Beat on high speed until the frosting is light and fluffy.
5. Frost the Cupcakes:
- Once the cupcakes are completely cool, frost them with the cream cheese frosting using a piping bag or a spatula.
