Classic Vanilla Cake Recipe

Ingredients:
For the Cake:
- 1 ½ cups (190g) all-purpose flour
- 1 ¼ cups (250g) granulated sugar
- ½ cup (115g) unsalted butter, softened
- 1 cup (240ml) whole milk
- 3 large eggs
- 2 tsp vanilla extract
- 2 tsp baking powder
- ½ tsp salt
For the Vanilla Buttercream Frosting:
- 1 cup (230g) unsalted butter, softened
- 3 ½ cups (440g) powdered sugar
- 2-3 tbsp heavy cream or whole milk
- 2 tsp vanilla extract
- Pinch of salt
Instructions:
1. Preheat the Oven:
- Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans or line them with parchment paper circles.
2. Prepare the Cake Batter:
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, using an electric mixer, cream the butter and sugar together until light and fluffy, about 3-4 minutes.
- Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
- Gradually add the dry ingredients to the butter mixture, alternating with the milk, beginning and ending with the dry ingredients. Mix just until combined. Be careful not to overmix.
3. Bake the Cake:
- Divide the batter evenly between the prepared pans. Smooth the tops with a spatula.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for about 10 minutes, then turn them out onto a wire rack to cool completely.
4. Prepare the Vanilla Buttercream Frosting:
- In a large bowl, beat the softened butter with an electric mixer until creamy.
- Gradually add the powdered sugar, 1 cup at a time, beating on low speed until combined.
- Add the vanilla extract and 2 tablespoons of heavy cream or milk. Beat on high speed until the frosting is light and fluffy. If the frosting is too thick, add more milk, one tablespoon at a time. If it’s too thin, add a little more powdered sugar.
5. Frost the Cake:
- Once the cakes are completely cool, place one cake layer on a serving plate or cake stand. Spread a layer of frosting on top.
- Place the second cake layer on top and spread the frosting over the top and sides of the cake.
- Decorate as desired with sprinkles, fresh fruit, or additional frosting decorations.
6. Serve and Enjoy:
- Slice and serve your classic vanilla cake. Enjoy it with a cup of coffee or tea, or as a sweet treat for any occasion!
