Ingredients:
For the Cake:
- 1 ½ cups (190g) all-purpose flour
- 1 ¼ cups (250g) granulated sugar
- ½ cup (115g) unsalted butter, softened
- 1 cup (240ml) whole milk
- 3 large eggs
- 2 tsp vanilla extract
- 2 tsp baking powder
- ½ tsp salt
For the Cake Pop Coating:
- 1 cup (230g) candy melts or chocolate (milk, dark, or white)
- 2 tbsp vegetable oil (optional, for thinning)
- Sprinkles, crushed nuts, or other toppings (optional)
For the Cake Pop Assembly:
- ¼ cup (60g) buttercream (see cupcake recipie)
Instructions:
1. Bake the Cake:
- Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan or line it with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, using an electric mixer, cream the butter and sugar together until light and fluffy, about 3-4 minutes.
- Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
- Gradually add the dry ingredients to the butter mixture, alternating with the milk, beginning and ending with the dry ingredients. Mix just until combined.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely.
2. Crumble the Cake:
- Once the cake has cooled, crumble it into small pieces using your hands or a fork. Place the crumbs into a large bowl.
- Add the frosting to the crumbled cake, mixing until the mixture holds together and can be easily shaped into balls. You may need to adjust the amount of frosting depending on the consistency of your cake crumbs.
3. Shape the Cake Pops:
- Use your hands to roll the cake mixture into 1-inch balls and place them on a parchment-lined baking sheet.
- Insert a lollipop stick into each cake ball, pressing gently to ensure it sticks. Refrigerate the cake pops for at least 30 minutes to firm up.
4. Coat the Cake Pops:
- Melt the candy melts or chocolate according to the package instructions. If the coating is too thick, you can add a bit of vegetable oil to thin it out.
- Dip each cake pop into the melted coating, making sure it’s fully covered. Gently tap the stick on the edge of the bowl to remove excess coating.
- If desired, sprinkle with toppings while the coating is still wet. Place the coated cake pops back on the parchment-lined sheet to set.
5. Serve and Enjoy:
